Our Bere Malt Vinegar is produced using bere barley then left to mature in Highland Park bourbon barrels giving deep, complex flavours behind the acidity. Bere, pronounced 'bear', is an ancient, heritage grain unique to Orkney. The landrace six-rowed spring barley dates back to the 8th century. We use the malted bere barley to make beer brewed specifically for the sole purpose of fermenting it into vinegar.
